Day 1 & 2 of New Fast and How Much I Gained Back After Refeed- plus Fitbit Versa stuff and other sundry nonsense.

Am on day 1 of another 1-3 day fast. The wasp bite is necessitating some inflammation busting, immune system assistance. My epi pen will not be available until Walgreens can locate more, so I have to be careful about future stings for now.

I took my blood pressure meds this morning, as it is finally elevated again.

Anyway, back to weight gain…. drumroll, please: I gained 5 lbs back overnight! Total weight loss from initial 6 day fast minus weight gain= 9 lbs in 6 days (after refeed). It was initially 14 lbs, but I knew a majority was water weight.

Still, not too shabby.

Also, my Fitbit Versa somehow got stuck and didn’t reset at midnight last night. I am currently in Fitbit limbo and we tried to reset it, but can’t.

Update- it updated the next day at midnight.

Day 2 and I lost 2 lbs, which brought it down to 11 lbs total in 8 days.

I broke fast after day 2 and will do intermittent again starting tomorrow.

I am a bit improved from wasp issue, now dealing with a bit of sciatica.

Spring cleaning the house currently, as my nephew from Palau is coming to spend his leave from the US Army with us. He’s been a year in Iraq, poor thing.

So, broke my fast at day 6 and glad I did. I will also be doing a shorter fast tomorrow (1-3 days, depending on how I feel). Maybe I will just do an intermittent 24 hr fast. I am going to wing it.

Unfortunately, was stung on finger by a paper wasp this morning and had a weird reaction.

There should be no way in hell I have 1hr 37 min of cardio, but the fucking wasp sting- even with the Benedryl- elevated my heart rate insanely today. No wonder I am exhausted. My blood pressure is still lower than normal, hours after it happened.

I have less than 5k steps for the day. I slept a lot. I ate a ton today- all keto.

Asparagus, eggs, keto enchiladas. I made keto charsiu bbq pork in the instant pot with pork belly. IDK how it turned out, still cooking as I type.

I also experienced stomach issues, which are not a shocker.

Life goes on- and all in all, quite pleased with how things have progressed- except for the damned wasp issue.

Keto Updates!! Son down almost 60 lbs and I am back to almost pre-preggo weight~

I had a lot of stuff happen since I blogged re the keto.

My son has lost almost 60 lbs since November- he is about 220 from about 280- solely from keto and he does most of his own cooking!

I will post pics of him soon!

I am also finally back to my fighting weight, lost probably 25 lbs since my last update- gained loads of muscle- but I was in Southern CA taking care of a relative who was injured in a motorcycle crash for months. Mostly exercise, fitbit, and keto, IF thrown in.

Unfortunately, am back home now and I will need surgery soon. I see a cancer specialist next week. A MRI diagnosed adenomyosis, which causes a painful and abnormally swollen uterus- lots of bloating and discomfort.

They have to check it for cancer after it is removed. My sister currently has cancer, so I am a bit worried. I am always tired lately.

Incredible keto chocolate soufflĂ©!

today I rocked a keto chocolate souffle with freshly whipped cream- AND 2 NET CARBS! It tastes like a lava cake married a sponge cake… or a British steamed pudding.

Jess’ Keto Chocolate Souffle

  • 2 tbs unsweetened cocoa powder OR raw cacao powder
  • 2-3 tbs powdered erythritol or sweetener of your choice
  • 2 tbs heavy cream
  • 1 tbs melted butter
  • 1 egg
  • 1/4th tsp vanilla extract
  • 1/4th-1/2 tsp baking soda
    Mix everything well-
    Grease ramekin or coffee mug and microwave 1-2 minutes-
    Plate with freshly whipped cream.
    SOOOO GOOD and sooo easy!

Yesterday, we made mozzarella stuffed meatballs with low carb Marinara- and chocolate keto mug cakes with freshly whipped cream- they were a huge hit!
